Greetings all! I’m back from a brief hiatus, as we recently welcomed our precious baby into the world, and have been truly savoring every minute as new parents. Since we have our hands full with bouncing Baby U, a dearest friend so thoughtfully dropped off the most delicious Barefoot Contessa Mexican Chicken Soup (yum!) and I just had to share the recipe with you, my loyal readers. Bursting with a symphony of spices, flavors and textures, this south of the border style dish makes a sensational weeknight dinner, and would also be gorgeous for entertaining company (this menu would be fabulous for game night or a tailgating party!). I’ve paired it with Ina’s Guacamole Salad and Dean Fearing’s Jalapeño Bacon Cornbread (the most divine cornbread that has ever graced my lips!) as well as an icy and decadent Chocolate Sorbet to complete the meal.
