Overnight Oatmeal


A bowl of warm, cozy oatmeal bejeweled with berries is my go-to breakfast, and so when I found this recipe for overnight oatmeal I knew I had to try it. I’ve heard so many people sing the praises of overnight oats (healthy, delicious, satisfying, etc.), so there must be something to it – especially this recipe since it uses the glorious slow cooker. I’m going to make it this weekend when my mom comes to visit (served in these bowls), and hope it is as delicious as it sounds.


1 cinnamon stick
8 crushed cardamom pods
1 cup rolled oats
1/2 cup steel-cut oats
1/2 cup buckwheat groats
1/4 cup chia seeds
1/4 cup amaranth
1/2 cup dried blueberries
4 cups almond milk
4 cups water
1/2 teaspoon cinnamon
1/2 teaspoon cardamom
1/4 cup brown rice syrup
1/2 cup buckwheat groats
2 tablespoons maple syrup
1/2 teaspoon salt


Wrap the cinnamon stick and crushed cardamom pods in cheesecloth and tie with string to secure.Combine this with all remaining ingredients in crockpot and stir to combine. Cook on “slow cook” low setting for 7 hours.
